Regarding your salary, the legal minimum wage in Canada is $16.65 CAD per hour (April 2023).

Previous experience in the hotel or restaurant industry is not compulsory, as some positions do not require any particular knowledge and are suitable for most people.
Employment is guaranted before you leave. We recommend you book a hostel for the two first weeks of your stay in Australia, so you can find accommodation.
